My husband found a recipe for oatmeal made with coconut milk when he lived in Brazil. We’re searching for a recipe that is similar. Unfortunately, all he can remember is those 2 ingredients. Does anyone have a recipe for oatmeal (the hot breakfast cereal) made with coconut milk?

I am looking for a recipe for homemade coconut ice cream. I have searched on-line and found many that call for coconut cream and shredded coconut. I am looking for one that would be made like vanilla ice cream but with coconut extract.
