How do you eat a fresh coconut? I opened it but the flesh is hard and brittle?

I managed to open a mature coconut, drained the juice and peeled all the flesh clean. But I tried the flesh and the texture is horrible, it’s hard and brittle and the flavor is weak. Whenever I eat coconut in like those canned fruit cocktails or canned coconut juice, the flesh is soft and chewy and kind of clear. Is this just boiled flesh or is this from young coconut?
Any way to eat a mature coconut other than raw? I’m not looking for recipies, just alternative ways to eat the coconut itself. Boil, bake..?

SUGGESTED USES FOR COCONUT:
Canned, unsweetened coconut milk is an acceptable substitute. It does not freeze well.
Steam mussels in coconut milk
Use in ice creams, sorbets, broths, soups and sauces.
Combine Goya-brand Tembleque Mix with coconut milk to make a delicious coconut custard.

Prepare fresh vegetables simmered in a coconut curry.
Use coconut milk for the liquid when you cook rice or pasta.
Color coconut by tossing 3 to 5 drops food coloring with 1 cup shredded coconut.
Simple Coconut-Curry Sauce for Vegetables or Seafood
1 tbsp. Vegetable oil
1 Medium onion, finely chopped
3 Garlic cloves, minced
3 tsp. Curry powder
1 can Unsweetened coconut milk
1 cup Chicken broth
Small carrots, sliced, chopped green onions
Sauté chopped onion, garlic and curry powder in medium skillet until onions are translucent.
Add milk and broth, reduce heat, simmer gently until reduced to one half, about 45 minutes.
Add carrots and simmer 2 minutes longer.
Remove from heat, add green onions and keep warm.

That’s not right. The coconuts that I eat have the texture of a crispy apple. Try a new coconut.
Break the white part away from the hard brown shell. Using a cheese grater, grate the white part. This is the same stuff you get in a bag. I like to coat it in sweetened condensed milk and then bake it in the oven at 350 for 7 minutes or until brown.
You can also just eat it raw. The white part it the edible part.
You have a MATURE coconut. It has hard flesh. If you want soft flesh you need a GREEN coconut. Most mature coconuts are used by grating the flesh for use in sweets and baked goods, but you can eat the hard flesh raw, although most folks don’t like it that way because it is so hard. I like green coconuts. I tap the eyes with an icepick and drain the milk. Then I open the husk and shell with a machete and hammer. The flesh of green coconuts tastes pretty good raw.
That softer, chewy, slip down your throat if you don’t catch it texture is only from a young coconut! So yummy! They are either found in a green shell or white with plastic wrap (the green is removed for your convenience so that it is easier to get into it). Definitely give the young coconut a try and see if you like it better, I know I did! Also, drink that water…it contains some vitamins and tastes pretty good!
